CHAMPAGNE EXTRAVAGANCE
FOR A CELEBRATION TO REMEMBER
For those who want to go big on Champagne during the festive season.
Something tinged with anticipation. Something that says “Tonight, anything is possible.” Then, enter the world prestige champagne, the ultimate liquid in decadence. These aren’t your every-day bubbles. No, we’re talking about bottles that deserve a seat at the table. The sort of champagne that needs to breathe in good company, mingling with candlelight, truffled aperitif finger food.
Prestige cuvées are the calling cards of the houses that craft them, poured with intent and meant to be remembered.
DOM PERIGNON: The Patron of Celebration
Let’s start with the icon : Dom Pérignon. A conversation all by itself – an elixir that has seduced poets, playboys, and the genuinely pious alike. It’s the embodiment of precision and passion. Every vintage is a snapshot of its year, refined through meticulous artistry. Dom Pérignon Vintage 2015 stands out for its complex aromatic flavour profile combining intense roasted and cocoa notes, balanced by delicate floral aromas of lime blossom, jasmine and peony. Elevated by a bouquet of spices such as aniseed and cardamom, Dom Pérignon 2015 also offers a fruity, botanical freshness, with subtle hints of orange and green papaya. This blend of flavours is characterized by its breadth and delicacy. Notes of peach, nectarine, citrus and gentian, giving the wine a rich texture and a diverse aromatic palate. This rich, well-balanced cuvée captures the essence of the exceptional terroirs from which it comes. It’s a champagne that struts like Bowie onstage – elegant, eccentric, and completely unapologetic.
Foodpairing : Serve with caviar.
KRUG: The Maverick’s Champagne
Krug is the rebel of the lot. It’s champagne for those who see rules and promptly dismiss them. Krug Grande Cuvée 172ème Édition is a blend of 146 wines from 11 different years, the youngest dating from 2016 and the oldest from the 1998 harvest. It spends around seven years in our cellars, giving it its distinctive expression and elegance. In all, more than 20 years of painstaking work have gone into making this Krug Grande Cuvée. The Cuvée reflects a seductive final composition of 44% Pinot Noir, 36% Chardonnay and 20% Meunier. Vivacious bubbles, holding a promise of pleasure. Aromas of flowers in bloom, ripe, dried and citrus fruits, as well as marzipan and gingerbread. Flavours of hazelnut, nougat, barley sugar, jellied and citrus fruits, almonds, brioche and honey.
Foodpairing : Serve it as an aperitif with San Daniele ham and mature comté or to accompany oysters, grilled shrimps, Indian or Moroccan food, as well as desserts such as carrot cake, tarte tatin and cheesecake.
VEUVE CLICQUOT LA GRANDE DAME: Power Dressed in Silk
If there’s one champagne that understands both power and femininity, it’s La Grande Dame. Named for the visionary widow, Madame Clicquot, this cuvée is all elegance with a backbone of steel. La Grande Dame 2015 is an exceptional sunny vintage for a wine full of tension and elegance. This solar vintage, while elegant and precise, offers fresh minerality with light floral notes of jasmine and acacia on the nose, which evolve into fruity notes of pear and clementine.
Foodpairing : It is the perfect match for Garden Gastronomy: A gastronomy straight from the garden, the best vegetables for the best grapes. Serve it with inverted dishes, where vegetables and fruits centre stage, while meat and fish are prepared like condiments.
DOM RUINART: Expression of Place and Time
Dom Ruinart Blanc de Blancs is an ode to purity. It hums with the quiet energy of the Côte des Blancs‘ chalky soils, a place where Chardonnay is more than a grape – it’s the the voice of the terroir itself. With a flinty precision and an almost ascetic clarity, this cuvée stands as the quiet intellectual among its peers. No bombast here, just a profound, introspective elegance. There’s a creamy texture beneath that razor-sharp acidity. The 2010 vintage is brimming with freshness with a distinct minerality. The aromas are playful: fig leaf with notes of black tea and fresh spices. And then there’s the finish – long, lingering, yet somehow weightless, underpinned by a thread of elegant bitterness.
Foodpairing : Pair it with spicy roast dishes such as Black Pork tenderloin, or with smoked or grilled fish or seafood such as smoked blue lobster.
FRANÇOISE BEDEL COMME AUTREFOIS: A Soulful Elegance
Now, for something less pretentious, more genuine. The wisdom and serenity exuded by Françoise Bedel‘s champagnes will never leave you indifferent. The estate is deeply committed to biodynamic viticulture, focusing primarily on Meunier grapes grown in the heterogeneous terroirs at the western gateway of the Marne ( loamy, clay-limestone soils, scattered with millstone ). Perfectly ripe grape harvests and extended time aging in the cellar give rise to deeply savory wines – both composed and energetic, with a rare authenticity. Their effervescence soothes the body, while their subtle oxidative notes nourish the soul. Walnut, aged oxidation, almond… This 2007 enchants with its bold flair. A magnificent, velvety texture is punctuated by an evanescent bubble, a fleeting caress that leaves a lasting impression. It fully embraces its oxidative character with poise and confidence. There’s a certain allure to a wine that wears its age so gracefully, where the oxidative notes aren‘t just present – they’re celebrated, accentuating the wine’s savory complexity.
Foodpairing : Pair it with traditional cuisine and beyond! Or alongside cheeses and game.
